Citric acid is used to prevent the discoloration of foods that results from oxidization, and adds sour punch to dishes. In India, citric acid is sometimes used to curdle milk in preparation for making paneer, a traditional Indian cheese.

Add chili, turmeric, rice and sauté until rice is glossy. Add salt, citric acid, water and bring to boil. Lower heat, cover pan and simmer for 25 min. or until rice is cooked. Add coconut and serve.
