The food is cooked in a way where the outer side becomes crispy and fried, whereas the inner side remains soft and moist. Dishes like Naan roti, Tandoori kebabs and chickens, vegetable kebab, paneer Kabab and various other bread items are made in a tandoor. These days, Tandoori Ovens are made to look stylish with the actual Tandoor Pot (Matka) made of either Clay or Metal (Mild Iron). Tandoors are usually found in restaurants and very few people are lucky to have a Tandoori Oven at home.

What makes Tandoori food special?

Tandoori food is known to be unique and popular because of its distinctive taste. It has a smoky kind of flavor that is usually produced because of the design of the clay oven. The heat in the tandoor is generated from the coals inside. As the food cooks inside the Tandoor, the juices of the food fall into the flames and get burned to produce a smoky flavor that is the patent tandoor smell. There are different kinds of tandoors based on the requirements and the space. Some of the most popular tandoors are square tandoors, clay tandoors, drum tandoors, and residential tandoors. Square tandoors are common in restaurants & commercial catering houses all across the world, they are also called punjabi tandoors.

Square Tandoors

A square tandoor is commonly used in all restaurants across the world and is good for commercial use. A stainless steel box is made and smoothened after which a clay box is placed inside the box and covered with a fiber blanket and a thermal insulation so that the heat is kept inside the pot. A combination of clay and charcoal is required in Tandoori cooking. Gas tandoors are more or less similar to square tandoors but are fitted with burners that help heat up the pot.

Clay Tandoors

Clay pots are handmade with care. A clay tandoor pot should be selected with care and caution. Additives like hair of goat, hay are added in the mixture of clay so that the clay can take the strength.

Catering / Drum Tandoor - Drum tandoors are fitted in stainless steel barrels with SS straps tied round the top, the centre and the bottom. The pot inside the barrel is insulated with thermal insulations rock salt and ceramic powder. Handles are used for lifting, pulling and pushing the tandoor. These tandoors are used by restaurants for onsite cooking. They are portable with wheels at the bottom.

Residential Tandoors - If you want to buy a small tandoor oven for home backyard parties, you can try out the drum style baby tandoor. These may use either charcoal or propane gas. They are portable with wheels at the bottom. Some also come with Grill Table attached for easy cooking.

How is a Tandoor used?

Tandoors are commonly used in all restaurants that prepare North Indian food. A fire is built in the bottom and that heats the walls of the clay oven as well as the air inside to 900 degree Fahrenheit. The fire is then died down so that the temperature remains same. Breads are then slapped on the sides of the oven and cooked. Non vegetarian food is cooked on long metal rods that are inserted into the oven. Your delicious food is ready!
