Indigenous to the Mediterranean region, coriander is now cultivated worldwide. With its slight citrus flavor, coriander is known to be used in both savory and sweet dishes. In India, it is an essential ingredient in curry powder, garam masala and in the Gujurati blend, dhana-jeeru. In the Middle East, it is popular in minced meat dishes and is known in Europe for seasoning sausages and stews. RECIPE: :Tomato Curry , Cook time: 20 minutesPrep time: 10 minutes, Serving size: 4, Heat level: Medium 14oz can tomatoes1 tsp chopped ginger2 cloves garlic chopped1 tsp. Rani Chili Powder1 tsp. salt1 tsp Rani Coriander powder 1/2 tsp Rani Cumin Powder4 tbsp. vegetable or olive oil 1/2 tsp. Rani Kalongi (onion) seeds 1/2 tsp. Rani Mustard Seeds 1/2 tsp. Rani Fenugreek seeds3 dried red chillies2 tbsp. fresh lemon juice3 hard boiled eggs In a large mixing bowel add tomatoes, ginger, garlic, chili powder, salt coriander, cumin and blend. In sauce pan heat oil and add kalongi, mustard, fenugreek seeds, stir fry for 1 minute. Add tomato mixture to sauté pan and stir fry for about 3 minutes and reduce heat, cover and cook for 7-10min. Stir frequently. Remove from heat. Cut hard boiled eggs into quarters. Add eggs and lemon juice to sauce. Garnish with cilantro if desired. Although very similar in appearance, Indian brown mustard has a different flavor than its Mediterranean counterpart from which it originated. It was one the few affordable spices in Europe during the Middle Ages. In Indian cuisine, mustard seeds are toasted in oil before they are added to the dish. Powdered mustard acts as an emulsifier in the preparation of condiment, and salad dressings. Mustard has a strong pungent flavor, and unlike any other spice it has virtually no aroma. RECIPE: :Gujarati Dhokla , Cook time: 30 min , Prep. time: 20 min , Serving size: 5-6 , Heat level: Medium 1 cup Rani Gram flour 1 tsp. sugar 1/2 tsp. salt juice of one lemon 1 tsp. baking soda 2 tbsp. sunflower oil 3 green chilies, finely sliced 2 tsp. Rani mustard seeds 10 fresh curry leaves 1 tbsp. dry unsweetened coconut powder 1 hand full of fresh cilantro leaves ¾ cup water Prepare steamer. Pour water into bottom of steamer and bring to boil. In a bowl mix gram flour, sugar, salt, and lemon juice. Gradually add water, stir well to prevent lumps. Sift in baking soda and pour mixture into 9 inch greased baking pan. Carefully lower pan into steamer and cover. Steam for 20 minutes. In a small pan, add oil and sauté green chilies, mustard seeds, curry leaves for one minute and then add the coconut. When steamed cake is done, pour spice mixture over evenly and add cilantro leaves. Cut and serve. Spices blend for Black Lentil (Urad whole)
Recipe : Soak overnight 110g Black Lentils (Urad whole) and 30g Red Kidney beans. Strain away water. Add 1.5 litre warm water in a deep pan and boil the beans till they are soft. Add more water when required. Separately cook 120g tomato puree & 15g Dal Makhani masala. Transfer it to boiling beans. Mix and simmer for 10 minutes. Add 40g cream and 30g butter. Check seasoning. Serve with Tandoori Parantha, Naan or Rice.
