Although very similar in appearance, Indian brown mustard has a different flavor than its Mediterranean counterpart from which it originated. It was one the few affordable spices in Europe during the Middle Ages. In Indian cuisine, mustard seeds are toasted in oil before they are added to the dish. Powdered mustard acts as an emulsifier in the preparation of condiment, and salad dressings. Mustard has a strong pungent flavor, and unlike any other spice it has virtually no aroma. RECIPE: :Gujarati Dhokla , Cook time: 30 min , Prep. time: 20 min , Serving size: 5-6 , Heat level: Medium 1 cup Rani Gram flour 1 tsp. sugar 1/2 tsp. salt juice of one lemon 1 tsp. baking soda 2 tbsp. sunflower oil 3 green chilies, finely sliced 2 tsp. Rani mustard seeds 10 fresh curry leaves 1 tbsp. dry unsweetened coconut powder 1 hand full of fresh cilantro leaves ¾ cup water Prepare steamer. Pour water into bottom of steamer and bring to boil. In a bowl mix gram flour, sugar, salt, and lemon juice. Gradually add water, stir well to prevent lumps. Sift in baking soda and pour mixture into 9 inch greased baking pan. Carefully lower pan into steamer and cover. Steam for 20 minutes. In a small pan, add oil and sauté green chilies, mustard seeds, curry leaves for one minute and then add the coconut. When steamed cake is done, pour spice mixture over evenly and add cilantro leaves. Cut and serve. Steps of cooking:
1. Add meat and garlic paste, ginger paste, Shan Pilau Biryani Mix and water (Beef/Goat/Lamb 2 cups, Chicken 1 cup).
2. Cover and cook on low heat until meat is tender (about 1 cup of stock should remain in the pot).Stir-in yogurt and keep aside.
3. Separately: in 15 cups / 3 liters of boiling water, stir in 2 table spoons of Shan Salt and soaked rice. Boil rice until cooked. Remove and drain thoroughly.
4. Spread half rice in a pot and pour meat curry over it. Top with remaining rice. Sprinkle food color if desired.
5. Heat oil and fry onion until golden and pour evenly over rice. Cover and cook on low heat until rice is tender (5-10 minutes).
Mix before serving.

1 cup plain yogurt 3 1/2 boneless chicken 1 tsp. salt 1 tsp. Rani Black Pepper Powder 1 tsp. Rani Cumin Powder 1 tsp. Rani Coriander Powder 1/2 tsp. Rani Chili Powder ¼ cup vegetable oil 1/2 tsp. Rani Cardamom Powder 1/2 tsp. Rani Clove Powder ¼ tsp. Rani Cinnamon Ground 2 tbsp. almonds slivered 2 tbsp. raisins 1 tsp. Rani White Poppy Seeds Combine yogurt, salt, black pepper, cumin, coriander, chili powder, cardamom, clove, cinnamon and poppy seed into a bowl. Set aside. Season chicken with additional salt on both sides. Put oil in a non stick pan and brown both sides of chicken and transfer them to bowl to marinate. Toast almonds and raisins and add to bowl. Pour total contents of bowl into a pan, bring to simmer and cover. Cook for 20 minutes. Stir occasionally. Remove cover and cook until sauce thickens and chicken is cooked all the way through. Serve with rice.
