Indigenous to Western Asia, Southern Europe and the Middle East, nigell is most widely cultivated in India. Often refereed to as onion seeds, kalongi is both nutty and slightly bitter in flavor. The whole seeds are used in pulses, vegetables, chutneys and naan breads, often dry roasted before being added to a dish. RECIPE: :Tomato Curry , Cook time: 20 minutes Prep time: 10 minutes , Serving size: 4 , Heat level: Medium 14oz can tomatoes 1 tsp chopped ginger 2 cloves garlic chopped 1 tsp. Rani Chili Powder 1 tsp. salt 1 tsp Rani Coriander powder 1/2 tsp Rani Cumin Powder 4 tbsp. vegetable or olive oil 1/2 tsp. Rani Kalongi (onion) seeds 1/2 tsp. Rani Mustard Seeds 1/2 tsp. Rani Fenugreek seeds 3 dried red chillies 2 tbsp. fresh lemon juice 3 hard boiled eggs In a large mixing bowel add tomatoes, ginger, garlic, chili powder, salt coriander, cumin and blend. In sauce pan heat oil and add kalongi, mustard, fenugreek seeds, stir fry for 1 minute. Add tomato mixture to sauté pan and stir fry for about 3 minutes and reduce heat, cover and cook for 7-10min. Stir frequently. Remove from heat. Cut hard boiled eggs into quarters. Add eggs and lemon juice to sauce. Garnish with cilantro if desired. Spices blend for Black Lentil (Urad whole) Recipe : Soak overnight 110g Black Lentils (Urad whole) and 30g Red Kidney beans. Strain away water. Add 1.5 litre warm water in a deep pan and boil the beans till they are soft. Add more water when required. Separately cook 120g tomato puree & 15g Dal Makhani masala. Transfer it to boiling beans. Though originating in Central and South America, chili powder has found its way into being a major component in Indian cuisine. India is one of the largest producers of chilies in the world. Indian Chili powders can rage from being mildly pungent to fiery hot depending on its classification. Rani Chillii Ground comes from the Kashmiri chilli grown in the northern most part of Kashmir. It is known for its bright crimson coloring. RECIPE: Kashmiri Pulao , Cook time: 15min. , Prep. time: 10min. , Serving size: 4-6 , Heat level: Medium 2 cups Rani Basmati Rice 2 cups milk, 1/2 cup heavy cream beaten smooth, 1 tsp. sugar salt to taste, 1/2 tsp. Rani Cumin Seeds, 3 Rani Clove Whole, 1 Rani Cinnamon Stick, 3 Rani Green Cardamoms, 1 Bay leaf, 1/2 cup water 1 tsp. Rani Chilli Powder 2 tbsp. Rani Ghee Wash and soak rice for 15-20 minute. Mix milk, cream, sugar, salt. Drain rice, keep aside. heat ghee in a heavy pan. Add cumin seeds, cinnamon, bay leaf, cardamoms, clove and chilli powder and saute. Add rice and fry in ghee for 2 minutes. Add milk, cream, mixture. Add 1/2 cup water. Bring to boil. When boil is reached cover and simmer till cooked (15 mins). Each Grain should be cooked, but separate. Add nuts and raisins to rice. Serve with yogurt. RECIPE: :Gujarati Dhokla , Cook time: 30 min , Prep. time: 20 min , Serving size: 5-6 , Heat level: Medium 1 cup Rani Gram flour 1 tsp. sugar 1/2 tsp. salt juice of one lemon 1 tsp. baking soda 2 tbsp. sunflower oil 3 green chilies, finely sliced 2 tsp. Rani mustard seeds 10 fresh curry leaves 1 tbsp. dry unsweetened coconut powder 1 hand full of fresh cilantro leaves ¾ cup water Prepare steamer. Pour water into bottom of steamer and bring to boil. In a bowl mix gram flour, sugar, salt, and lemon juice. Gradually add water, stir well to prevent lumps. Sift in baking soda and pour mixture into 9 inch greased baking pan. Carefully lower pan into steamer and cover. Steam for 20 minutes. In a small pan, add oil and sauté green chilies, mustard seeds, curry leaves for one minute and then add the coconut. When steamed cake is done, pour spice mixture over evenly and add cilantro leaves. Cut and serve.
