Indigenous to Western Asia, Southern Europe and the Middle East, nigell is most widely cultivated in India. Often refereed to as onion seeds, kalongi is both nutty and slightly bitter in flavor. The whole seeds are used in pulses, vegetables, chutneys and naan breads, often dry roasted before being added to a dish.

14oz can tomatoes 1 tsp chopped ginger 2 cloves garlic chopped 1 tsp. Rani Chili Powder 1 tsp. salt 1 tsp Rani Coriander powder 1/2 tsp Rani Cumin Powder 4 tbsp. vegetable or olive oil 1/2 tsp. Rani Kalongi (onion) seeds 1/2 tsp. Rani Mustard Seeds 1/2 tsp. Rani Fenugreek seeds 3 dried red chillies 2 tbsp. fresh lemon juice 3 hard boiled eggs In a large mixing bowel add tomatoes, ginger, garlic, chili powder, salt coriander, cumin and blend. In sauce pan heat oil and add kalongi, mustard, fenugreek seeds, stir fry for 1 minute. Add tomato mixture to sauté pan and stir fry for about 3 minutes and reduce heat, cover and cook for 7-10min. Stir frequently. Remove from heat. Cut hard boiled eggs into quarters. Add eggs and lemon juice to sauce. Garnish with cilantro if desired.

Recipe : Soak overnight 110g Black Lentils (Urad whole) and 30g Red Kidney beans. Strain away water. Add 1.5 litre warm water in a deep pan and boil the beans till they are soft. Add more water when required. Separately cook 120g tomato puree & 15g Dal Makhani masala. Transfer it to boiling beans. Mix and simmer for 10 minutes. Add 40g cream and 30g butter. Check seasoning. Serve with Tandoori Parantha, Naan or Rice.

Mother's Recipe Spice Mix -goan Chicken Xacuti 80 gms
Goan chicken curry or chicken xacuti goes great with rice, rotis, freshly
baked bread, wadas or good old laadi pav. Again, this is a simple recipe if
you have the Goan curry masala ready to go in your freezer. Check out the
recipe for the curry masala base here. I remember growing up, my mother used
to make this chicken curry on one Sunday a month.

Though originating in Central and South America, chili powder has found its way into being a major component in Indian cuisine. India is one of the largest producers of chilies in the world. Indian Chili powders can rage from being mildly pungent to fiery hot depending on its classification. Rani Chillii Ground comes from the Kashmiri chilli grown in the northern most part of Kashmir. It is known for its bright crimson coloring.

2 cups Rani Basmati Rice 2 cups milk, 1/2 cup heavy cream beaten smooth, 1 tsp. sugar salt to taste, 1/2 tsp. Rani Cumin Seeds, 3 Rani Clove Whole, 1 Rani Cinnamon Stick, 3 Rani Green Cardamoms, 1 Bay leaf, 1/2 cup water 1 tsp. Rani Chilli Powder 2 tbsp. Rani Ghee
Wash and soak rice for 15-20 minute.
Mix milk, cream, sugar, salt. Drain rice, keep aside. heat ghee in a heavy pan. Add cumin seeds, cinnamon, bay leaf, cardamoms, clove and chilli powder and saute. Add rice and fry in ghee for 2 minutes. Add milk, cream, mixture. Add 1/2 cup water. Bring to boil. When boil is reached cover and simmer till cooked (15 mins). Each Grain should be cooked, but separate. Add nuts and raisins to rice. Serve with yogurt.

Recipe : Wash, trim and cut 1 Kg. Chicken into 8 pieces and set aside. Heat 100g.oil/ghee in a pan & fry 3 chopped onions till golden. Add 3 chopped tomatoes, 1/2 tspn. Deggi Mirch & stir well. Add 15g. Chicken Masala & salt to taste. Stir fry for 2-3 min. Add Chicken pieces and fry them for 10 min. Add 100g. beaten natural yoghurt, 60ml. water & mix. Reduce to low heat, cover & simmer for 20 min. Prevent it from sticking at bottom. Add 15ml. lemon juice & 2g. Kasoori Methi leaves, stir & serve.

Also boil 150g. dressed vegetables like carrots, cauliflower, peas etc. In a deep pan fry 100g. finely chopped red onions in 60g. butter till golden. Add coarsely chopped 100g. tomatoes, salt, 15g. Pav Bhaji masala. Transfer the boiled vegetables,

Although very similar in appearance, Indian brown mustard has a different flavor than its Mediterranean counterpart from which it originated. It was one the few affordable spices in Europe during the Middle Ages. In Indian cuisine, mustard seeds are toasted in oil before they are added to the dish. Powdered mustard acts as an emulsifier in the preparation of condiment, and salad dressings. Mustard has a strong pungent flavor, and unlike any other spice it has virtually no aroma.

1 cup Rani Gram flour 1 tsp. sugar 1/2 tsp. salt juice of one lemon 1 tsp. baking soda 2 tbsp. sunflower oil 3 green chilies, finely sliced 2 tsp. Rani mustard seeds 10 fresh curry leaves 1 tbsp. dry unsweetened coconut powder 1 hand full of fresh cilantro leaves ¾ cup water Prepare steamer. Pour water into bottom of steamer and bring to boil. In a bowl mix gram flour, sugar, salt, and lemon juice. Gradually add water, stir well to prevent lumps. Sift in baking soda and pour mixture into 9 inch greased baking pan. Carefully lower pan into steamer and cover. Steam for 20 minutes. In a small pan, add oil and sauté green chilies, mustard seeds, curry leaves for one minute and then add the coconut. When steamed cake is done, pour spice mixture over evenly and add cilantro leaves. Cut and serve.

Add caraway seeds and peppercorns, stir. Add curry leaves and rice, reduce heat and stir till well coated, about 2 minutes. Add tomatoes, salt, and puree. Combine and add water. Stir well, cover and cook on low heat till rice is fluffy and water has evaporated. Sprinkle with coriander leaves and serve hot.
