Now you can make multiple cheesecakes at the same time in the Instant Pot using Stacking Insert Pans. Below, is my experiment to show you how to make two cheesecakes and caramel sauce at the same time using PIP method in Instant Pot.

A few months ago, I decided to try to see if I could make two cheesecakes at the same time in Instant Pot. I used Ashley Singh’s (myheartbeets) “three ingredient mango cheesecake” recipe https://myheartbeets.com/ with a few tweaks. These are crustless, Indian-style cheesecakes (aka bhapa doi). Since I had Dubbas Insert Pans which is 3 tier, I decided to use the third insert to make caramel (although I knew that I’d have to put in the caramel a second time since the cook time for caramel is longer than that for cheesecakes). I attempted a mango cheesecake in the bottom insert, coffee cheesecake in the top insert and caramel in the middle insert. Success! Next time maybe I will try 3 cheesecakes – all different flavors! This is the remaining condensed milk from both cans, which is going to be turned caramel 
All ready to go into the IP. Since each Dubbas insert has its own lid, I did not have to cover the pans with aluminum foil as called for in the recipe!

Success!! After 30 minutes Manual at high pressure and QR after 20 minutes, a toothpick inserted into both cheesecakes came out clean. They were done. 
I usually put condensed milk into the IP for 40 minutes Manual high pressure for a rich, brown caramel. Since in this case, this went in along with the cheesecakes for 30 minutes, it wasn’t quite done 
Another 20 minutes Manual High Pressure for the condensed milk gave me this caramel. 
Since my insert pans, don’t have a removable bottom, I was a little nervous about demoulding the cheesecake. So I put the insert pan assembly in the fridge for a few hours, so the cheesecakes could cool and firm up. Once they had cooled down and set I ran a knife along the edge of the cheesecake. I removed the lid and placed a plate over the top of the pan. Then I flipped over the pan in one swift motion holding the plate in place. Smacked the bottom of the pan gently a few times and yay, The cheesecake came out intact! 
Since my insert pans do not have a removable bottom, I was a little nervous about de-moulding the cheesecake. So I put the insert pan assembly in the fridge for a few hours, so the cheesecakes could cool and firm up. Once they had cooled down and set I ran a knife along the edge of the cheesecake. Smacked the bottom of the pan gently a few times and yay, The cheesecake came out intact!
