Native to Southern Asian, turmeric is lightly aromatic, and pungent in taste. Turmeric comes from a rhizome very much like ginger and is cultivated primarily in India, Indonesia and China. Essential in curry powder blends, it is also an important flavoring for many south Asian dishes, while Indian vegetarian cooking relies on it heavily. Turmeric is very sensitive to sunlight and should be stored in a dark place.
RECIPE: :Aloo Gobi , Cook time:15 min., Prep. time: 10 min., Serving size: 4 min., Heat level: Medium
3 tbsp. butter4 tbsp. water2 tsp. salt 1/2 tbsp. Rani coriander powder 1/2 tbsp. Rani cumin seeds 1/2 tbsp. Rani chili powder 1/2 tsp. Rani ajwain seeds 1/2 tbsp. Rani turmeric powder1 large potato cut in 1’ cubes1 head of cauliflower broken into florets1 onion slicedgarnish with fresh coriander leaves In wok or large fry pan sauté onion, cumin seed and butter for 3 minutes. Add potato and water. Cover and cook for 5 minutes. Uncover, add turmeric, chilli powder, coriander powder, and salt. Stir well and add cauliflower. In a bowl mix gram flour, sugar, salt, and lemon juice. Gradually add water, stir well to prevent lumps. Sift in baking soda and pour mixture into 9 inch greased baking pan. Carefully lower pan into steamer and cover. Steam for 20 minutes. In a small pan, add oil and sauté green chilies, mustard seeds, curry leaves for one minute and then add the coconut. When steamed cake is done, pour spice mixture over evenly and add cilantro leaves. Cut and serve.

4 boneless pork steaks 14 oz can crushed tomatoes 1 large onion, finely chopped 1 tbsp olive oil 1 tsp Rani Fennel Seeds 1/2 tsp Rani Caraway Seeds 1 tbsp Rani Paprika 2 tbsp sour cream 1/2 tsp Rani Black Pepper Ground 1/2 tsp Salt Heat olive oil in fry pan. Brown pork steaks on both sides and remove from pan. In empty pan add onion and sauté until golden brown. Stir in tomatoes, fennel, caraway, and paprika. Return steaks to pan and simmer on low heat for 30 minutes. Season with salt and pepper. Swirl in sour cream and garnish with dry paprika. Goes well with a light pasta dish.

1 cup plain yogurt 3 1/2 boneless chicken 1 tsp. salt 1 tsp. Rani Black Pepper Powder 1 tsp. Rani Cumin Powder 1 tsp. Rani Coriander Powder 1/2 tsp. Rani Chili Powder ¼ cup vegetable oil 1/2 tsp. Rani Cardamom Powder 1/2 tsp. Rani Clove Powder ¼ tsp. Rani Cinnamon Ground 2 tbsp. almonds slivered 2 tbsp. raisins 1 tsp. Rani White Poppy Seeds Combine yogurt, salt, black pepper, cumin, coriander, chili powder, cardamom, clove, cinnamon and poppy seed into a bowl. Set aside. Season chicken with additional salt on both sides. Put oil in a non stick pan and brown both sides of chicken and transfer them to bowl to marinate. Toast almonds and raisins and add to bowl. Pour total contents of bowl into a pan, bring to simmer and cover. Cook for 20 minutes. Stir occasionally. Remove cover and cook until sauce thickens and chicken is cooked all the way through. Serve with rice.
